The law is clear on the topic and there are ample precedents. The employer has to make "reasonable" accomodation for a person's religious beliefs.

If handling pork is something most employees don't need to do, the employer ought to be able to find a non-pork-related job for the employee. If most people who work there with those skill sets have to handle pork, the employer does not need to try to carve out a non-pork-related job.
