Ah - OK - I'd misunderstood the question.

It's not really more popular than n any other Western country. For most, cutting back on meat is seen as more healthful - and beef, in particular, was never as big a part of the Israeli diet as it is in the US. The land and climate here are not great for raising cattle - in fact, most beef consumed in Israel is imported, making it rather expensive. As such, the Israeli diet naturally tends toward the more plant-heavy side of things.
