Judaism accepts all experimentally proven facts and observations of the theory of evolution

Since there are none, then Judaism ought not accept the theory. It is a bunch of conjecture formulated by pagans and there is no science behind it.

The struggle between faith and evolution as espoused by Darwin was an issue with the Catholic Church, not Judaism

Darwin did not say he "came to gradually disbelieve in the Catholic Church"; he said he "came to gradually disbelieve in Christianity" actually; Darwin had nothing to do with the Catholic Church, so I don't even know where you got that from (he was raised Anglican). And since the entire Tanakh is part of Christian scripture, he also had "an issue" with Judaism, like all left-wing theoreticians do.

This particular quote of Darwin's is highly antisemitic:

I had gradually come, by this time, to see that the Old Testament from its manifestly false history of the world, with the Tower of Babel, rainbow as a sign, etc., etc., and from its attributing to God the feelings of a revengeful tyrant, was no more to be trusted than the sacred books of the Hindoos (sic), or the beliefs of any barbarian.
Redounds to the old "Jewish god is a tyrant" hatemongering.

Besides all that, Darwin was one of the first, if not the first, in his era to contend the belief that "evolution" is compatible with belief in God.
