You don't even have to go near the beach. In fact, I don't think the South Shore of Long Island is the best part of the island. The North Shore is the exceptional areas. There are some exceptional areas south too (like the east end in the Hamptons), and random areas in Nassau and Suffolk (Hewlett Bay Park, as well as others), but the North Shore of Nassau lives up to it's "Gold Coast" reputation, and you don't have to go near the water. Old Westbury and Brookville are not waterfront areas either, and are in the middle of the island. The middle has plenty of exceptionally nice areas too no where near the shore, like Half Hollow Hills, and I could go on and on.
Seriously, just take an aerial tour close in all through Nassau on the North Shore, and much of western Suffolk too (eastern suffolk on the north sure is nice too, but it's much less built up so hard to compare to anything, it's kind of rural yet.
You have some pockets of "meh" areas on the north shore in Eastern Suffolk too (like Rocky Point, Sound Beach, and some other little pockets), but for the most part, in my opinion, the North Shore is beautiful. The South Shore is much more spotty to find the great spots, as much of the South Shore was developed as summer bungalows in Western Suffolk, but there's still great pockets of nice exceptional areas there too if you know where to look.
