Some sell it seasonally for Thanksgiving and Christmas. If they do, it's just one brand, Armour, and it gets two rows on a shelf. It's a very minor product you have to search for. The product itself is very processed. Includes hydrogenated lard and several additives. Main reason for lack of lard availability? Americans don't demand it. Another reason is pigs have been bred to be less fat and more muscle. Farmers and butchers can't produce as much lard as they once did. Years ago I could fry 2 eggs with two strips of bacon fat. Now it's hard because the bacon does produce as much fat. However some farms breed Heritage pigs that aren't bred to be lean but it's hard to find. |
